Pangsit Ayam Kuah Pedas
Tender chicken-filled wontons served in a fragrant, spicy broth with garlic, fresh chillies, and spring onions. A comforting Indonesian-style noodle-shop favourite that is quick, warming, and full of flavour.
Ingredients
For the Wontons
- 20 wonton wrappers
- 250 g ground chicken
- 2 cloves garlic, finely minced
- 1 spring onion, thinly sliced
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- ½ tsp ground black pepper
- ½ tsp salt
- 1 tsp sugar
For the Broth
- 1 litre water or chicken stock
- 3 cloves garlic, finely chopped
- 5–10 bird’s eye chillies, thinly sliced
- 1 spring onion
- 1 tbsp oyster sauce
- Salt, sugar, and ground black pepper, to taste
- A little cooking oil, for sautéing
Method
- Prepare the filling
Combine the ground chicken, garlic, spring onion, oyster sauce, sesame oil, pepper, salt, and sugar. Mix thoroughly until well combined. - Fill the wontons
Place about 1 teaspoon of filling in the centre of each wonton wrapper. Fold and seal the edges with a little water, making sure they are firmly closed. - Cook the wontons
Bring a pot of water to a boil. Carefully add the wontons and cook until they are fully cooked and float to the surface. Remove with a slotted spoon and set aside. - Make the spicy broth
Heat a little oil in a saucepan and sauté the garlic until fragrant. Add the chicken stock, sliced chillies, oyster sauce, salt, sugar, and pepper. Bring to a boil, then reduce to a gentle simmer. - Finish the dish
Add the cooked wontons to the broth and simmer for another 2–3 minutes so they can absorb some of the flavour. - Serve
Ladle the wontons and hot broth into bowls. Finish with sliced spring onion and fresh chilli. Serve immediately.
