Ingredients
- 100 ml lemon juice
- 100 ml water
- 150 g sugar
- 1 tablespoon lemon zest
Method
- Combine ingredients
In a small saucepan, combine the lemon juice, water, sugar, and lemon zest. - Heat gently
Place over medium heat and stir until the sugar has completely dissolved. - Simmer
Bring to a gentle simmer and cook for 3–5 minutes to slightly thicken and infuse the zest. - Cool and strain
Remove from heat and allow the syrup to cool completely.
Strain to remove the zest if a smooth syrup is preferred.
Use & Storage
- Use cooled syrup to lightly soak ladyfingers for lemon tiramisu
- Store refrigerated in an airtight container for up to 1 week
