Lemon Syrup (for Lemon Tiramisu)

Ingredients

  • 100 ml lemon juice
  • 100 ml water
  • 150 g sugar
  • 1 tablespoon lemon zest

Method

  1. Combine ingredients
    In a small saucepan, combine the lemon juice, water, sugar, and lemon zest.
  2. Heat gently
    Place over medium heat and stir until the sugar has completely dissolved.
  3. Simmer
    Bring to a gentle simmer and cook for 3–5 minutes to slightly thicken and infuse the zest.
  4. Cool and strain
    Remove from heat and allow the syrup to cool completely.
    Strain to remove the zest if a smooth syrup is preferred.

Use & Storage

  • Use cooled syrup to lightly soak ladyfingers for lemon tiramisu
  • Store refrigerated in an airtight container for up to 1 week
