Oi-muchim (Korean Spicy Cucumber Salad) 

Ingredients

  • 1 English cucumber (or 2 to 3 kirby cucumbers), washed
  • ¼ cup thinly sliced onion
  • 1 green onion, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons soy sauce
  • 2 teaspoons Korean hot pepper flakes (gochugaru)
  • 2 teaspoons sesame oil
  • 2 teaspoons toasted sesame seeds
  • 1 teaspoon sugar (optional)

Methods

  1. Prepare the cucumbers:
    Slice the cucumber thinly into rounds. If using kirby cucumbers, you can slice them into slightly thicker rounds. Place the cucumber slices in a bowl.
  2. Add the onion:
    Add the thinly sliced onion to the bowl with the cucumbers.
  3. Make the seasoning:
    In a small bowl, mix together the chopped green onion, minced garlic, soy sauce, gochugaru (Korean hot pepper flakes), sesame oil, toasted sesame seeds, and sugar (if using). Stir well to combine.
  4. Mix the salad:
    Pour the seasoning mixture over the cucumber and onion slices. Toss everything together until the cucumbers and onions are evenly coated with the spicy dressing.
  5. Serve:
    Transfer the cucumber salad to a serving dish. You can enjoy it immediately or chill it in the fridge for 10-15 minutes before serving for a more refreshing taste.
