Lemon Curd

Ingredients

  • 2 large eggs
  • 2 egg yolks
  • 150 g caster (superfine) sugar (¾ cup / 5.3 oz)
  • ½ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 115 g unsalted butter, cubed and cold (½ cup / 1 stick / 4 oz)

For best results, always weigh ingredients where a weight is provided.

Methods

  1. Combine Ingredients: Beat together the eggs, egg yolks, sugar, lemon zest, and lemon juice in a bowl. Pour this mixture into a small saucepan.
  2. Heat Mixture: Stir the mixture over low-medium heat until the sugar has dissolved. Make sure the mixture doesn’t come to a boil.
  3. Add Butter: Gradually add the cold butter, a few pieces at a time, stirring until each addition is fully melted and incorporated.
  4. Cook Until Thickened: Continue cooking the mixture for a few more minutes until it thickens. It should coat the back of a spoon or leave a thick coating on the side of the pan when tilted.
  5. Strain: Pour the mixture through a fine-mesh strainer into a clean bowl to remove any bits of egg that may not have mixed through.
  6. Jar and Cool: Pour the custard into sterilized preserving jars. Cool at room temperature for 30 minutes. Seal the jars and store in the fridge.
