Basic Vinaigrette

This versatile basic vinaigrette is the perfect staple to elevate any salad or dish. With just a handful of ingredients, you can create a tangy and slightly sweet dressing that pairs beautifully with a variety of greens, vegetables, and even grilled meats. The combination of extra-virgin olive oil, vinegar, Dijon mustard, and a touch of maple syrup or honey delivers a balanced flavour that can be easily customised to suit your personal taste. Whether you’re preparing a quick weeknight meal or a special dinner, this vinaigrette is a simple yet delicious way to add a burst of flavour to your meals.

Ingredients:

  • 1 cup extra-virgin olive oil
  • 6 tablespoons vinegar of your choice
    (options: balsamic, red wine, or white wine vinegar)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons maple syrup or honey
  • 4 garlic cloves, minced or pressed
  • ½ teaspoon sea salt, or to taste
  • Freshly ground black pepper, to taste

Instructions:

  1. Combine the ingredients
    In a small bowl or jar, whisk together the vinegar, Dijon mustard, maple syrup (or honey), minced garlic, sea salt, and freshly ground black pepper until well combined.
  2. Gradually add the olive oil
    Slowly pour in the olive oil while whisking continuously to help emulsify the dressing. If you’re using a jar, you can add the olive oil all at once, seal the lid, and shake vigorously until the mixture is smooth and emulsified.
  3. Taste and adjust seasoning
    Give the vinaigrette a taste and adjust the salt, pepper, or sweetness to your liking. If you’d like it tangier, add a little more vinegar. For more sweetness, add an extra drizzle of maple syrup or honey.
  4. Serve or store
    Use the vinaigrette immediately to dress salads, vegetables, or grains, or store it in an airtight container in the refrigerator for up to one week. Shake or whisk before each use, as separation may occur.

Tips:

  • For a creamier texture, continue whisking for an extra minute after adding the oil.
  • You can customize the flavor by adding herbs, such as thyme or basil, or a splash of lemon juice for extra brightness.
