Ingredients
- Chicken
- 1.25 kg (3 lb) bone-in, skin-on chicken thighs and/or drumsticks (e.g., 4 thighs + 3 drumsticks, or 6 thighs). Optionally, remove skin or trim excess fat.
- 2 tsp olive oil (or your preferred oil)
- Seasoning Mix
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp onion powder (or garlic powder)
- 1 tsp salt
- 1/2 tsp black pepper
- Gravy
- 3 tbsp all-purpose flour
- 1 1/2 cups beef stock or broth
- 1/2 tsp black pepper
Methods
- Preheat your oven to 200°C (390°F) or 180°C (355°F) if using a fan oven.
- Drizzle the chicken with olive oil and sprinkle with the seasoning mix, applying most of the seasoning to the skin side. Arrange the chicken in a 23 x 33 cm (9 x 13 inch) baking dish, skin side up.
- In a bowl, whisk together the flour, beef stock, and black pepper until smooth. Pour the mixture around the chicken in the baking dish.
- Bake for 50 minutes, or until the chicken is cooked through and the skin is crispy.
- Carefully remove the chicken from the dish. The sauce might look separated or congealed. Whisk the sauce thoroughly until smooth. If you prefer a thicker gravy, return the dish to the oven for an additional 1-3 minutes without the chicken. For a thinner consistency, add a splash of hot tap water to the sauce and stir.
