Gravy Baked Chicken

Ingredients

  1. Chicken
    • 1.25 kg (3 lb) bone-in, skin-on chicken thighs and/or drumsticks (e.g., 4 thighs + 3 drumsticks, or 6 thighs). Optionally, remove skin or trim excess fat.
    • 2 tsp olive oil (or your preferred oil)
  2. Seasoning Mix
    • 1 tsp paprika
    • 1 tsp dried thyme
    • 1 tsp onion powder (or garlic powder)
    • 1 tsp salt
    • 1/2 tsp black pepper
  3. Gravy
    • 3 tbsp all-purpose flour
    • 1 1/2 cups beef stock or broth
    • 1/2 tsp black pepper

Methods

  1. Preheat your oven to 200°C (390°F) or 180°C (355°F) if using a fan oven.
  2. Drizzle the chicken with olive oil and sprinkle with the seasoning mix, applying most of the seasoning to the skin side. Arrange the chicken in a 23 x 33 cm (9 x 13 inch) baking dish, skin side up.
  3. In a bowl, whisk together the flour, beef stock, and black pepper until smooth. Pour the mixture around the chicken in the baking dish.
  4. Bake for 50 minutes, or until the chicken is cooked through and the skin is crispy.
  5. Carefully remove the chicken from the dish. The sauce might look separated or congealed. Whisk the sauce thoroughly until smooth. If you prefer a thicker gravy, return the dish to the oven for an additional 1-3 minutes without the chicken. For a thinner consistency, add a splash of hot tap water to the sauce and stir.
  6. Serve the chicken with the gravy and enjoy!
